Law's Hearty Hamburger Soup
1 medium chopped onion
1 chopped green pepper
1 & 1/2 lbs. ground beef
3 - 4 cups tomatoe juice
(If you prefer use tomatoe soup - 2 cans,
but then watch the salt later on)
1 small can tomatoe paste (this is the 5.5 oz tin)
1 cup diced potatoes
1 cup sliced carrots
4 cups milk
1/3 cup flour
In a dutch oven or soup pot brown the ground beef and onion. Add potatoes, green pepper and carrots. Simmer for a few minutes, then add tomatoe paste and tomatoe juice. Cover and cook over low heat until vegetables are tender.
Combine flour with 1 cup of the milk and beat until smooth (as in making gravy). Stir into the soup mixture and add the remaining milk. Add seasoning salt, garlic powder, pepper to taste.
Heat, stirring frequently but do not boil.
Makes 10 servings. Makes a thick stew type dish that's really tasty on a cold day.
NOTE: I don't measure the above ingredients, but rather just dice up potatoes and carrots as I like.
